Ingredients of Cauliflower fried rice

  1. Prepare 1 head of cauliflower.
  2. You need 1 tbsp of coconut oil.
  3. Prepare 4 slice of bacon.
  4. Prepare 200 grams of peeled and deveined prawns.
  5. It’s 4 of eggs.
  6. You need 1 tbsp of fish sauce.
  7. You need 1 of onion, chopped.
  8. Prepare 2 of garlic cloves.
  9. You need 1/2 of capsicum.
  10. It’s 1/4 of ginger.
  11. You need 3 tbsp of tamari.
  12. It’s pinch of himalayan salt.
  13. You need pinch of ground black pepper.
  14. It’s 3 tbsp of chopped parsley.

Cauliflower fried rice Instructions

  1. Pulse cauliflower until it resembles rice
  2. Melt coconut oil and fry bacon until crispy. Remove from pan and pan fry prawns until almost cooked
  3. Whisk eggs and make a thin omelette, when cooked remove and slice thinly.
  4. Heat remaining coconut oil and add onion and garlic cook until soft, add capsicum and ginger cook for 3-5 mins add the cauliflower and cook until tender. Add the tamari salt and pepper and remaining ingredients sir fry for a minute or two until heated through.
  5. Serve with splash of fish sauce and chilli if desired
