  1. Preheat oven to 200 degrees
  2. Pour oil into large oven proof skillet
  3. Sauté garlic for 1 minute then and chilli flakes in the skillet
  4. Add onions to the skillet until the colour changes to light brown
  5. Add carrots and other vegetables to the skillet and sauté until soft
  6. Add tomatoes to the skillet and bring to a simmer
  7. Add green peas to the skillet and cook it for five minutes
  8. Taste for seasoning – add fish stock cube, salt and pepper. Start with one cube and add more to adjust the taste
  9. Add feta to the skillet
  10. Bake for 10 minutes
  11. While baking, cook shrimp – (1) boil water in a pan, (2) prepare ice water in a bowl separately, (3) put shrimps into the boiled water, (4) take them out when you see the surface colour changes to pink, (5) put them in the ice water, (6) leave them until you take the skillet out from the oven
  12. Take the skillet out from the oven
  13. Add shrimp and parsley to the skillet and mix it
