Prawn bhuna curry Step By Step

  1. Marinate 500g prawns in vinegar and juice of half the lemon for 30 minutes.
  2. Roughly chop 1 medium onion and simmer on medium heat in plenty of butter or ghee for a few minutes.
  3. Add 2 tsp crushed garlic, 1 tsp crushed ginger, 1 stick cinnamon, 2 bay leaves, and 3 green cardamom pods and simmer until onion has softened.
  4. Add 2 tsp cumin, 1.5 tsp turmeric, 1.5 tsp ground coriander, stir and simmer for a minute.
  5. Add marinated prawns and chopped chilies, simmer for a few minutes.
  6. Add 2 tbsp tomato purée and 1 tin of cherry tomatoes, break up some of the cherry tomatoes, stir and bring back to a simmer.
  7. Add 2 tsp brown sugar and juice of half the lemon, stir and simmer for a few minutes.
  8. Add salt and black pepper to taste and a handful of chopped fresh coriander, stir and simmer for a few minutes.
  9. Serve with basmati rice and/or naan bread with some fresh coriander on top.
